Tequila Lime Flank Steak Salad with Chile Lime Vinaigrette



ingredients:

tequila lime flank steak
1 (2 pound, 1-inch thick) flank steak
1/3 cup tequila
1/4 cup olive oil
1/4 cup lime juice
1/2 teaspoon salt
1/2 teaspoon pepper
zest of 2 limes
1 head of red romaine lettuce, washed, dried and torn
Margaret Bruya's Coyboy Caviar
1 ounce colby jack cheese, freshly grated
blue tortilla chips for topping (I recommend Garden of Eatin's Red Hot Blues!)

chile lime vinaigrette
2 tablespoons olive oil
1 tablespoons rice vinegar
1/2 tablespoon red pepper or chile oil
2 teaspoons honey
the juice of 2 limes
a pinch of salt + pepper

directions:

Whisk tequila, olive oil, lime juice, salt, pepper and lime zest in a bowl until combine. Add flank steak to a ziplock bag or baking dish and pour marinade ingredients over top. Marinate for 2-24 hours, flipping steak a few times. When you're ready to make the salads, heat the broiler in your oven on the highest setting and place an oven rack directly underneath. Broil steak for 5 minutes, flip and broil for 5 minutes more. If your steak is 1-1 1/2 inches thick, this will result in steak that is done medium-well. Let it rest for 5-10 minutes, then slice thin strips on an angle. Or, grill it, which is what I did!
After putting the steak in the marinade, make the Cowboy Caviar and put it in the fridge so that the flavors have a chance to meld.
To assemble the salad, place lettuce in the bowl with a pinch of salt and pepper, toss, and cover with flank steak, Cowboy Caviar, cheese, and tortilla chips. Top with dressing and toss!
chile lime vinaigrette
Combine all ingredients in a mason jar, shaker bottle or large bowl and shake/whisk until combined.

This was a MAJOR hit! The marinade was delicious and the vinaigrette is to die for! This will be a repeater for sure!

Margaret Bruya's Cowboy Caviar



This recipe was shared with my by my friend Laura (Bruya) Wilson. It is her mom's famous recipe and has been a staple at their family gatherings for years. After you make it, you'll understand why! It's always a major hit!

Ingredients:
1 cup frozen or fresh corn
1 can of black eyed peas, drained
1 can of great northern beans, drained
3 avocados
3 chopped Roma toms
1 small white onion
1/2 jalapeno (optional)
1/2 bunch of cilantro
salt to taste
1 fresh squeezed lime
Serve with your choice of tortilla chips (I highly recommend Garden of Eatin's Red Hot Blues!)

This recipe does best if you make it a few hours before you plan on serving it. Put it in the fridge so that the flavors have a chance to meld. Delicious!

Peanut Butter Oatmeal Cookies (sugar, oil, eggs, and flour-free!)


The Skinny:

Ingredients:
2 Ripe Bananas, Mashed
1/3 C. Reduced Fat Peanut Butter
2/3 C. Unsweetened Applesauce
1 Tsp. Vanilla
1/2 Tsp. Salt
1/2 Tsp. Cinnamon
Dash of Ground Cloves
Dash of Ground Nutmeg
1 1/2 C. Quick or Old Fashioned Oats
1/4 C. Nuts (I used dry unsalted peanuts.)
1/4 C. Semi Sweet Chocolate Chips
1/4 C. Reduced Fat Unsweetened Shredded Coconut (Optional)
Directions:
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper and set aside. Mix together the bananas, peanut butter, applesauce, vanilla, and spices.  Add in the oats, nuts, chocolate chips, and coconut; stir until well combined.
Spoon a rounded 2 tbsp. of the cookie mixture onto the lined baking sheet, leaving an inch or two between each and flatten slightly. I placed a few more chocolate chips on top of each cookie. Bake for 20-30 minutes and allow to cool slightly.

For a healthy cookie, these were actually pretty tasty! And they actually turned out just like the picture, which is always an added bonus! :)

Black Bean and Quinoa Enchilada Bake



Ingredients:
1 lb ground turkey
1 cup uncooked quinoa, rinsed
2 cups water
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 jalapeño, seeds and ribs removed,diced
1 red pepper, seeds removed, diced
1 orange pepper, seeds removed, diced
1 cup corn frozen kernels
Juice of 1 small lime
1 teaspoon ground cumin
1 tablespoon chili powder
1/3 cup chopped cilantro
Salt and pepper, to taste
2 (15 oz) cans black beans, drained and rinsed
2 cups red enchilada sauce
2 cups shredded Mexican cheese
Toppings: Sliced green onions, avocado slices, sour cream, optional

Directions:
1. Preheat the oven to 350 degrees F. Grease a 9x13 baking dish with cooking spray and set aside.
2. Add quinoa and water to a medium saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn the heat to low and simmer for about 15 minutes, or until water is absorbed. Or cook it in a rice cooker! Remove from heat and fluff with a fork. Cover quinoa and set aside.
3. In a large skillet, brown the ground turkey. Add the onion, garlic, and jalapeño. Sauté until softened, about 5 minutes. Add in the peppers and corn. Cook for about 3-4 minutes. Add the lime juice, cumin, chili powder, and cilantro. Stir to combine. Season with salt and pepper, to taste.
4. In a large bowl, add the cooked quinoa and black beans. Add the sautéed vegetable/meat mixture and stir to combine. Pour in the enchilada sauce and stir. Add 1/2 cup shredded cheese.
5.Pour the black bean and quinoa mixture into the prepared baking dish. Top with remaining shredded cheese. Cover the pan with foil. Bake for 20 minutes, then remove foil. Bake an additional 10 minutes, or until the cheese is melted and edges are bubbling. Remove from the oven, and let cool for 10 minutes. Garnish with toppings, if desired. Serve warm. Freezes well!

Pizza Stuffed Bell Peppers


Makes 4 Stuffed Peppers
Time: 1 hr, 10 minutes

Ingredients
2 tbsp olive oil
1/2 red onion, diced
2 cloves garlic, minced
1 lb ground Italian turkey sausage
4 bell peppers, tops cut off and seeds removed 
4 button mushrooms, diced
10 black olives, sliced
1/2 cup tomato or pizza sauce 
1/4 cup tomato paste
1 tsp crushed red peppers
1 1/2 tsp Italian seasoning
Dash of salt and pepper
2 cups shredded Italian cheese

Directions
Heat oven to 400 F
Heat olive oil in a large pan over medium heat.
Once oil is hot, add onions to pan and cook until translucent, stirring often (2 to 3 minutes)
Add garlic and cook for an additional minute, while continuing to stir
Add Italian sausage, peppers and mushrooms to pan, cook until meat is browned, about 10 minutes
Drain meat mixture and add to a large bowl along with olives, tomato sauce, tomato paste, crushed red peppers, herbs, salt and pepper. Stir until well combined.
Scoop the filling evenly into each of the four bell peppers and top with shredded cheese.

Place peppers standing up into a small glass baking dish.
Bake for 40-45 minutes, until peppers are tender and filling is heated through.

Flying Goat Copy: Grace Veggie Sandwich

After I had the Grace Veggie Sandwich at The Flying Goat, I wanted it again right away so I took it upon myself to recreate it. I added in some grilled chicken and the outcome was divine! To make this meal gluten free, simply make it into a salad. It's equally as delicious!



Ingredients:
2 grilled chicken breasts, sliced (I just seasoned mine with sea salt and pepper)
1 cucumber, sliced
1 onion, caramelized
1 roasted red pepper (you can buy them canned at the store)
1 roma tomato, sliced
4 oz goat cheese, sliced
balsamic vinaigrette dressing
your choice bread (I use the sandwich buns from Costco)
mixed greens (a handful for sandwiches, or enough to make a salad)

Toast bread and top with all ingredients. Drizzle with balsamic vinaigrette dressing and enjoy!

Honey-Lime Quinoa Sweet Potato Burritos

Ingredients
  • 1 1/2 lbs sweet potatoes, peeled if desired and diced into 1/2-inch cubes
  • 4 Tbsp olive oil, divided
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/4 tsp ground coriander
  • 1/8 - 1/4 tsp cayenne pepper
  • Salt and freshly ground black pepper
  • 1 cup quinoa
  • 1 small yellow onion, diced (1 cup)
  • 1 clove garlic, minced
  • 1 (14.5) oz can black beans, rinsed and drained
  • 1 cup frozen yellow corn
  • 3 Tbsp honey
  • 3 Tbsp fresh lime juice
  • 2 Tbsp chopped fresh cilantro
  • Corn or flour tortillas
  • Diced avocados 
  • Feta cheese

Directions
  • Cook quinoa according to package directions. Preheat oven to 425 degrees. Line a baking sheet with foil then place sweet potatoes on foil. Drizzle with 3 Tbsp olive oil and toss to evenly coat. Sprinkle evenly with cumin, paprika, coriander, cayenne pepper and season lightly with salt and pepper to taste then toss to evenly coat. Bake in preheated oven 15 - 20 minutes until tender, removing from oven and tossing once halfway through baking.
  • Meanwhile, in a large skillet, heat remaining 1 Tbsp olive oil over medium-high heat. Once hot add onion and saute until caramelized (golden brown on edges and tender), about 5 - 6 minutes, adding in garlic during last 30 seconds of sautéing. Reduce heat to medium-low, add in drained black beans, corn, honey and lime juice. Heat until warmed through. Toss in roasted sweet potatoes, quinoa, and cilantro. Serve over warm tortillas with desired toppings.

Skinny Chicken Fettucini Alfredo



Ingredients:
3 boneless, skinless chicken breasts, grilled and cut into chunks (about 2 cups)
2 cups roasted broccoli florets
2 cups chopped yellow squash
8 ounces fettuccine
2 tablespoons extra virgin olive oil
2 teaspoons minced garlic
2 tablespoons flour
1 cup fat-free, low sodium chicken broth
1/4 cup plain greek yogurt
1/4 cup skim milk
1/4 teaspoon pepper
1 Tbsp oregano
3/4 cup freshly grated Parmesan cheese

Directions:
In a pot of boiling, salted water, cook the pasta according to package directions. Drain and set aside.
In a medium saucepan, heat the olive oil over medium-low heat. Add garlic and cook, stirring frequently, until the garlic is golden, 1 to 2 minutes.
Whisk in the flour until smooth, about 2 minutes. Gradually whisk in the chicken broth, Greek yogurt, milk, pepper, and oregano. Bring to a low boil, stirring constantly. Lower the heat and simmer, stirring gently, until the mixture thickens, about 3 minutes. Stir in 3/4 cup Parmesan.
Add cooked chicken, broccoli, and squash to sauce mixture, followed by the cooked pasta. Toss to combine and serve with more Parmesan, if desired.

As a chicken fettucini lover, I give this recipe two thumbs up! I don't think I'll ever make it with butter and cream again!

Southwest Chopped Salad with Cilantro Dressing



Ingredients
Large head of romaine

2 chicken breasts
15 oz. can black beans, rinsed and drained
1 large orange bell pepper
1 pint cherry tomatoes
2 cups corn 
5 green onions

cumin, salt, and pepper to tast
Creamy Cilantro Lime Dressing (Recipe below)

Directions
Season chicken breasts with cumin, salt, and pepper.
Grill chicken breasts and chop into bite-sized pieces.
Finely chop romaine, bell pepper, tomatoes, and green onions.
Place all ingredients in a large bowl and stir to combine.
Toss with desired dressing.

Creamy Cilantro Lime Dressing 

 Ingredients
1 cup loosely packed cilantro, stems removed and roughly chopped
1/2 cup plain Greek yogurt
2 Tbsp. fresh lime juice (about 1/2 lime)
1/4 cup olive oil
1 1/2 tsp. white vinegar

1/8 tsp. salt
*The original recipe calls for 1-2 garlic cloves, but I thought it was WAY too much garlic and it               completely overtook the dressing. Next time, I will omit it completely.

Directions
Puree all ingredients in a blender or food processor until smooth.

Crockpot Cilantro Lime Chicken Tacos


Ingredients:
1 lb. boneless skinless chicken breasts
juice from 2 limes
1/2 cup of cilantro
1 packet of taco seasoning
1 t dried onions
1/2 cup of water
shredded cheese
sour cream
salsa
chopped tomatoes

Directions:
1. Put all ingredients into crock-pot. Cook on low all day, or set crock-pot to high and cook for four(ish) hours. 
2. Shred, stir well.
3. Spoon into soft taco tortillas.

4. Top with cheese, sour cream, salsa, and tomatoes.

Cauliflower Pizza Crust



This recipe will make 1 12" pizza crust. If you are feeding more than 2 people, I recommend doubling it.

1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed
1/4 teaspoon kosher salt
1/2 teaspoon dried basil (crush it even more between your fingers)
1/2 teaspoon dried oregano (crust it even more between you fingers)
1/2 teaspoon garlic powder
optional a few shakes of crushed red pepper
1/4 cup shredded parmesan cheese
1/4 cup mozzarella cheese
1 egg
optional 1 tablespoon almond meal

Desired amount of sauce, cheese for topping, and other toppings. 

Place a pizza stone in the oven, or baking sheet if you don't have a pizza stone. Preheat oven to 450 degrees. On a cutting board, place a large piece of parchment paper and spray it with nonstick cooking oil. 

Wash and throughly dry a small head of cauliflower. Don't get one the size of your head unless you are planning on making 2 pizzas. Cut off the florets, you don't need much stem. Just stick with the florets. Pulse in your food processor for about 30 seconds, until you get powdery snow like cauliflower. You should end up with 2 to 3 cups cauliflower "snow". Place the cauliflower in a microwave safe bowl and cover. Microwave for 4 minutes. Dump cooked cauliflower onto a clean tea towel and allow to cool for a bit before attempting the next step.

Once cauliflower is cool enough to handle, wrap it up in the dish towel and ring the heck out of it. You want to squeeze out as much water as possible. This will ensure you get a chewy pizza like crust instead of a crumbly mess. 

Dumped ringed out cauliflower into a bowl. Now add 1/4 cup parmesan cheese, 1/4 cup mozzarella cheese, 1/4 teaspoon kosher salt, 1/2 teaspoon dried basil (crush up the leaves even more between your fingers before adding), 1/2 teaspoon dried oregano (crush up the leaves even more between your fingers before adding), 1/2 teaspoon garlic powder (not garlic salt), and a dash of red pepper if you want.  Now add your egg and mix away. Hands tend to work best. 

Once mixed together, use your hands to form the dough into a crust on your oiled parchment paper. Pat it down thoroughly, you want it nice and tightly formed together. Don't make it too thick, you are making a thin crust pizza.

Using a cutting board slide the parchment paper onto your hot pizza stone or baking sheet in the oven. Bake anywhere from 11-20 minutes depending on your oven, until it starts to turn golden brown. Really make sure it is a nice golden color. Remove from oven.

Add however much sauce, cheese, and toppings you want. Slide parchment with topped pizza back in the hot oven and cook for another 5 to 7 minutes until the cheese is melted, bubbly, and slightly golden.

Test your patience and allow it to cool for a minute or two. Probably closer to two. Then using a pizza cutter and a spatula serve up your delicious grain-free cauliflower crust pizza!

*Our pizza slices were pretty floppy, and we had to eat them with a fork. I think if I would have left the crust in the oven longer before topping it, it may have held together better. 

This was surprisingly good! It's even hubby approved, and for something that is gluten free, that's a pretty big deal!

Lemon Chicken Turkey Burgers with Spiced Yogurt Sauce


Ingredients

  • 1/2 cup chopped green onions
  • 1/3 cup Italian-seasoned breadcrumbs
  • 1 tablespoon Moroccan or Greek seasoning blend**
  • 1/2 teaspoon coarsely ground black pepper
  • 2 large egg whites, lightly beaten
  • 1 pound ground turkey
  • 2 teaspoons grated lemon rind, divided
  • 1 tablespoon olive oil
  • 1/2 cup plain low-fat yogurt
  • 1 1/2 teaspoons chopped fresh oregano
  • 4 (6-inch) pitas, cut in half
  • 2 cups shredded lettuce
  • 1/2 cup diced tomato
**If you don't have Greek seasoning on hand, you can make it yourself. Here is the recipe I followed:
  • 2 teaspoons kosher salt
  • 1 teaspoon pepper
  • 2 teaspoons oregano
  • 1 1/2 teaspoons onion powder
  • 1 teaspoon cornstarch
  • 1 teaspoon parsley
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Preparation

  • Combine first 6 ingredients; add 1 teaspoon rind, stirring well. Divide mixture into 8 equal portions, shaping each into 1/4-inch-thick oval patties.
  • Heat oil in a large nonstick skillet over medium-high heat. Add patties; cook 2 minutes on each side or until browned. Cover, reduce heat to medium, and cook 4 minutes.
  • Combine remaining 1 teaspoon rind, yogurt, and oregano, stirring well. Fill each pita half with 1 patty, 1 tablespoon yogurt mixture, 1/4 cup lettuce, and 1 tablespoon tomato.
These burgers are a fun escape from the "norm" and are bursting with flavor!

Spinach Feta Turkey Burgers



Ingredients:

  • 1 lb ground turkey (or ground beef)
  • 1 cup old fashioned oats
  • 2 large egg whites
  • 10 oz frozen, chopped spinach, thawed with liquid squeezed out
  • 3/4 cup feta cheese
  • roasted red peppers (I used canned ones)
Directions:
  • Combine all ingredients aside from peppers in a mixing bowl and combine with your hands. 
  • Form into about 8 patties.
  • Grill, top with roasted red peppers, and enjoy!
These were delicious! Even my toddler scarfed his down! The original recipe didn't recommend any condiments. We just used a bit of mayo. I think they would be even better with some chipotle mayo. We'll give that a whirl next time, because there will definitely be a next time!

Blackened Chicken with Avocado Cream Sauce and Cilantro Lime Quinoa




Ingredients
  • 2 Boneless Skinless Chicken Breasts
  • ½ Teaspoon of Paprika
  • ¼ Teaspoon of Salt
  • ¼ Teaspoon of Pepper
  • ¼ Teaspoon of Cayenne Pepper
  • ¼ Teaspoon of Onion Powder
  • ¼ Teaspoon of Cumin
  • 1 Teaspoon of Olive Oil
  • 1 3/4
  • 1/4 Cup Lime Juice
  •  Cups of Low Sodium Chicken Stock or Broth
  • 1 Cup of Quinoa
  • A Dash of Salt and Pepper
  • 2 Tablespoons of Cilantro, chopped
  • 1 Avocado
  • 2 Tbsp Plain Greek Yogurt
Instructions
  1. Combine all the dry seasonings in a small bowl. Mix them together and then season both sides of each chicken breast.
  2. Add the teaspoon of olive oil to a large pan or skillet. Heat the olive oil for a minute over medium/high heat. Add the chicken breasts to the pan. Cook for seven minutes on each side with the lid on. OR Grill it! I recommend the grilling!
  3. Add the chicken stock/broth, lime juice, quinoa, and cilantro to your rice cooker and cook, or follow instructions on quinoa package.
  4. Serve the sliced chicken breast on top of the quinoa. Top with avocado cream sauce.

To Make Avocado Cream Sauce:
  1. Place the flesh from an avocado along with two tablespoons of Greek yogurt in a food processor and puree until smooth.

I made just a few minor tweaks to the original recipe I found for this and it was delicious! The best part was how incredibly easy it was to make!

Reece's Pieces Pastel Egg Cookies




Ingredients:
  • 1 1/2 sticks butter, softened
  • 1 c peanut butter
  • 1 c sugar, plus some left aside
  • 1 c brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 Tbsp baking soda
  • 2 c flour
  • 1/2 c chocolate chips
  • 1 bag Reece's Pieces Pastel Eggs
Directions:
  • Preheat oven to 375.
  • Cream together butter, peanut butter, both sugars, vanilla, eggs and baking soda with a mixer.
  • Add 1 c flour and continue to mix with mixer. 
  • Add the rest of the flour and mix with wooden spoon. Check texture. If dough is not sticky, you're ready to roll. If it is still sticky, slowly add more flour until it's not. 
  • Stir in chocolate chips.
  • Roll dough into small balls (about an inch in diameter), then roll them in extra sugar.
  • Bake on a greased cookie sheet for 8-10 minutes. 
  • As soon as the cookies come out of the oven, place 2 Reece's Pieces Pastel Eggs on top and let cool.

Spicy Hawaiian Burgers

Ingredients:
2 pounds ground chicken
6 pineapple rings (or equivalent slices, cut about 1/2" - 3/4" thick)
6 slices pepper jack cheese
6 whole wheat hamburger buns
1/4 cup low-sodium soy sauce
1 tsp smoked paprika
1 tsp chili powder
1/2 tsp seasoning salt 
1/2 tsp ground cumin
1 clove garlic, minced
chipotle mayo (I used store bought, but there are plenty of recipes online if you'd like to make your own)

Combine the ground chicken, soy sauce, 1/2 the paprika, 1/2 the chili powder, seasoning salt, cumin, and garlic. Lightly mix with your hands and divide into 6 even balls. Form patties, making them slightly thinner in the middle and sprinkle with remaining paprika and chili powder. Refrigerate about 30 minutes.

Preheat the grill to medium heat. Coat grates lightly with oil. Grill burgers over medium heat about 6 minutes per side. The burgers should flip easily when they are ready to turn, if they want to stick, give them another minute. Top with cheese for the last 1-2 minutes of cooking time to melt. Remove to a plate and cover with aluminum foil to rest. Grill buns if desired.

For the pineapple, if you are using rings, grill directly on the grates over medium heat. Carefully turn after 1-2 minutes. If you are using pineapple slices or chunks, thread onto skewers and grill skewers in the same fashion. Assemble burgers and enjoy.

Baked Chicken Chimichangas/Santa Fe Chicken Salad Wraps




I LOVE chimichangas, but I don't love that they're fried so I was really excited when I found a recipe for baked chimichangas. However, most of the ingredients were pretty basic. Then I found a recipe for Santa Fe Chicken Salad wraps, and thought they sounded delicious. So, I altered the chicken salad a bit and made baked chimichangas out of them! Below are the directions for both the chimichangas and the wraps.

Ingredients: 
    • 2/3 cup nonfat, plain yogurt
    • 3 tablespoons lime juice
    • 1/4 teaspoon paprika
    • 1/4 teaspoon cumin
    • 1 - 2 tablespoon minced cilantro
    • 2 – 3 green onions, sliced thin
    • 2 cups shredded chicken
    • 2/3 cup black beans
    • 1/3 cup corn kernels
    • Tortillas
    • Olive Oil
    • Diced tomatoes, sour cream, and guacamole for topping (chimichangas only)

    • If you are making wraps, you will also need:
    • 1/2 – 3/4 teaspoon salt
    • 1/4 – 1/2 teaspoon black pepper
    • 1 stalk celery, diced
    • 1/3 cup diced red bell pepper
    • Salad Greens or Baby Spinach and avocado slices for garnish

    • Directions for chimichangas:
    • Preheat oven to 400 degrees. Mix all ingredients together in a large bowl. Spoon mixture into tortillas, fold them, and place in a greased pan. Brush chimichangas with olive oil. With oven rack on second slot from the top, bake the chimichangas for 30 minutes or until golden brown. Top with diced tomatoes, sour cream, and guacomole.

    • Directions for wraps:
    • Combine all ingredients and place in tortilla. Top with mixed greens or spinach and sliced avocado.

    • I can't vouch for the wraps since I haven't actually made them, but judging from the chimichangas (which were delicious) I will definitely give them a whirl this summer!
