Ingredients:
- 4 c unsifted all-purpose flour (I use whole wheat flour)
- 2 c quick or old fashioned oats, uncooked
- 2 t baking soda
- 2 t ground cinnamon
- 1 t salt
- 1 1/2 c butter, softened
- 2 c firmly packed brown sugar
- 1 c granulated sugar
- 1 egg
- 1 t vanilla
- 1 15oz can Libby's solid pack pumpkin
- 1 c semi-sweet chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Combine, flour, oats, soda, cinnamon, and salt. Set aside.
- Cream butter and gradually add sugars, beating until light and fluffy.
- Add egg and vanilla; mix well.
- Alternate additions of dry ingredients and pumpkin, mixing well after each addition.
- Stir in chocolate chips.
- Bake for 15 minutes until cookies are firm and lightly browned.
- Remove from cookie sheets and cool on wire racks.
I made these and wow...AMAZING! Definitely a must have recipe!
